An apple caramel with a maple ganache and pecan pieces

IIngredients: Milk chocolate (sugar, cocoa butter, whole MILK powder, cocoa mass, whey powder (MILK), emulsifier, SOYA lecithin, natural vanilla flavouring), PECANS, butter (MILK), glucose syrup, sweetened condensed milk, (skimmed MILK, sugar), vegetable fat (coconut), emulsifier - mono- and diglycerides of fatty acids, salt, natural flavourings, apple puree (saccharose, apple juice, glucose-fructose syrup, water, citric acid E330, Sodium citrates E331, colours  - E141, E101, thickeners (modified corn starch E1442) natural flavour, preservative (potassium sorbate E202)), sorbitol, glucose, maple drops, apple drops natural flavouring propylene glycol (E1520),  pecan drops natural flavouring triacetin (E1518) citric acid, decoration (sugar, colour e172, E555, E100, spirulina extract, emulsifier - sunflower lecithin)

Milk chocolate contains min cocoa solids 37% and min milk solids 20.1%; Dark chocolate contains min cocoa solids 58% and 70%,  White chocolate contains min cocoa solids 30% and min milk solids 14%; Gold chocolate contains min cocoa solids 30.4% and min 28.3% milk solids;
